This organic safflower oil variety is especially high in oleic fatty acid content (C18:1) at levels typically between 70-80%. After extraction from the safflower seed, the oil is fully refined to yield a clear honey appearance with a neutral aroma and flavor profile. Due to its high oleic acid content, this safflower oil has increased stability and resistance to oxidation along with a higher smoke point over 400°F, making this a preferred option in high heat applications such as for frying and sauteing.
